Cashew Cookie Energy Bites

I am all about having healthy and accessible snacks and sweet treats on hand at all times, and these Cashew Cookie Energy Bites are no exception. Energy bites, balls, truffles...whatever you want to call them, are quite popular in the health and wellness world and for good reason.

For one, there are a plethora of recipes you could follow, all using different superfood combinations, flavors, etc.! These tasty bites for example are made up of all the goods: protein (hemp seeds, cashews, oats), fiber (dates) and healthy fat (coconut). Truly making them the perfect anytime snack! 

These Cashew Cookie Energy Bites are also insanely easy to throw together and last for a crazy long time, so just one afternoon of prep will allow you to get your snack on for up to a couple of weeks! 

Cashew Cookie Energy Bites

(Makes 18 Bites)

Ingredients:
20 dates, pitted*
1/2 cup raw cashews
1/3 cup gluten-free rolled oats
2 Tbs unsweetened shredded coconut flakes
2 Tbs hemp seeds
1/2 tsp cinnamon
1/8-1/4 tsp nutmeg
1/8-1/4 tsp ginger
1-2 Tbs filtered water 

*I like using deglet noor dates. They come already pitted unlike medjool dates and are a little bit smaller. If you already have medjool dates in your pantry or can't find deglet dates, then I would blend all of the ingredients without water first and see how they combine. Add one tablespoon of water at a time and only use as much as needed. Medjool dates are bigger than deglet dates, therefore you may not need two full tablespoons of water. 

Instructions:

1. Place all ingredients (with the exception of one tablespoon of water) in a food processor and blend (see photo above). Add remaining tablespoon of water if needed.

2. Using a spoon, scoop and roll mixture using your hands into small balls (about 1 inch or so in size). 

3. Store in an airtight container in the fridge for up to 1-2 weeks (or longer if kept in freezer...my preferred choice)!
