One Ingredient Homemade Almond Butter

I absolutely LOVE almond butter! Well, actually I love all types of nut butters...pecan, cashew, walnut, hazelnut, peanut (even though peanuts are not technically nuts but legumes), and even seed butters like sunflower or sesame (tahini)! All of them are equally delicious and so versatile.

I enjoy a tablespoon of nut butter every morning in a green smoothie, or with a nice bowl of oatmeal. On toast, or with a sliced apple as a mid-day snack. Or even in a stir-fry, like my Veggie Stir-Fry w/ Spicy Thai Peanut Sauce

Along with being super tasty, nut butters also have wonderful nutritional value. A two tablespoon serving of almond butter contains about 6 grams of protein and approximately 8 milligrams of vitamin E. As an antioxidant, vitamin E protects the body from harmful cell damage and decreases inflammation. Almond butter is also rich in fiber, calcium, magnesium, potassium, and iron.

One thing I often seem to have trouble finding are nut butters that contain only the nuts and nothing else. I don't like seeing added sugar and/or salt when looking at the ingredients, so that's another reason why this recipe is so great because it calls for only ONE...almonds! How simple is that?! 

Seriously this One Ingredient Homemade Almond Butter is so easy anyone can make it. And it tastes so good, I highly doubt you will ever buy store bought nut butter again!

Homemade Almond Butter

Ingredients:
3 cups raw almonds

Instructions:

1. Preheat oven to 350 degrees F.

2. Measure out almonds and place on a baking tray. Roast in the oven for 10 minutes. 

3. Place roasted almonds in the food processor and blend. Scraping down the sides as needed. Blend the almonds until smooth and creamy, about 10 minutes. 

4. Store in a covered container in the fridge.
