Healthy Rice Cake Snacks 6 Ways
If you're looking for a healthy, no-fuss snack, rice cakes are the way to go.
I'll spend most days dreaming up all the different ways I could prepare my afternoon rice cake and come snack time I can hardly wait to throw it on my plate.
One day I might be craving something sweet, the next it could be something savory, and sometimes it's both! So I am always looking for new ways to enjoy my favorite snack that satisfy all of my cravings.
After much deliberation (and lots of taste testing) I've chosen my 6 favorite rice cake snack recipes to share with all of you! All made with whole-food, plant-based toppings that are gluten, dairy and refined sugar-free.
Each one of these recipes as nutritious as they are delicious. Loaded with fiber, protein, and essential vitamins and minerals, these rice cakes truly make the perfect plant-powered snack!
Healthy Rice Cake Snacks 6 Ways
Ingredients:
Almond Butter Coconut Cacao:
1 plain, unsalted brown rice cake
2 Tbs raw almond butter
1 Tbs unsweetened coconut flakes
1-2 tsp raw cacao nibs
Peanut Butter Banana:
1 plain, unsalted brown rice cake
2 Tbs raw peanut butter
1/2 banana, sliced
Almond Butter Chia + Flax:
1 plain, unsalted brown rice cake
2 Tbs raw almond butter
1/2 tsp whole flaxseed
1/2 tsp whole chia seed
drizzle of honey
dash of cinnamon
Smashed Avocado:
1 plain, unsalted brown rice cake
1/4 avocado
1 tsp hemp seeds
drizzle of EVOO + lemon juice
pinch of sea salt + black pepper
Hummus + Cucumber:
1 plain, unsalted brown rice cake
1/2 mini cucumber, sliced
Tbs hummus
drizzle of EVOO
pinch of black pepper
Spicy Smashed Avocado:
1 plain, unsalted brown rice cake
1/4 avocado
drizzle of Frank's Red Hot or sprinkle of red pepper flakes
Notes: a sprinkle of hemp seeds for extra protein would taste amazing on all of the rice cakes, both savory and sweet, and a dash of turmeric would be delicious on the savory cakes for added antioxidant and anti-inflammatory benefits.
Instructions:
Choose your recipe, prepare your toppings and place on your cake! For the smashed avocado cakes, I recommend slicing the avocado then scooping with a spoon and using a fork to smash and spread on the rice cake.
