5-Minute Ultimate Oatmeal Bowl
Lately I want only two things for breakfast. My usual green smoothie or a delicious serving of oatmeal. I don't know if it's the cold weather or what, but I can not get enough of my morning bowl of oats! I love how filling of a breakfast oatmeal is, and how easily interchangeable it can be by using a different combination of superfood add-ins and toppings each time I make it. The other thing I love about oatmeal, and this recipe to be exact, is that it is filled with all of the essential nutrients: complex carbohydrates, fiber, protein, healthy fats, antioxidants and anti-inflammatory properties. Making this Ultimate 5-Minute Oatmeal Bowl the perfect fuel to start your day!
5-Minute Ultimate Oatmeal Bowl
(Makes 1 Serving)
Ingredients:
1/2 cup gluten-free rolled oats
1/3 cup blueberries or raspberries, frozen or fresh
3-4 Tbs unsweetened vanilla almond or hemp milk
1 tsp maca powder
1 tsp chia seeds
1 tsp ground flaxseed
1/4-1/2 tsp cinnamon
1 cup + 1 Tbs water
Toppings:
2 Tbs chopped walnuts or pecans (or sub nut/seed butter)
1 Tbs unsweetened coconut flakes
1 Tbs pumpkin seeds
1 Tbs cacao nibs
1 tsp hemp seeds
drizzle of honey or pure maple syrup, or sprinkle of bee pollen for added sweetness (optional)
Instructions:
1. In a small saucepan, pour in the oats and water and cook on medium-high heat.
2. Once the water has started to boil (this will happen quick), add chia and flaxseeds, maca powder, cinnamon, and vanilla then stir all ingredients together to combine and reduce heat to medium-low.
3. Next add berries and cook for another another 2 minutes or until you reach your desired oatmeal consistency.
4. Pour oats into a bowl and top with chopped nuts (or nut/seed butter), coconut flakes, pumpkin seeds, cacao nibs, hemp seeds, and almond or hemp milk.
*This recipe can be made neutropenic by subbing the berries for banana, or consult with your doctor about whether or not frozen berries and oats are okay on your diet.
